Palak Paneer Recipe

Cook time: 20-30 minutes

Serves: 4-5 people

Ingredients:

  • 300grams cubed paneer cheese
  • 250g frozen spinach
  • 1 finely diced onion
  • 1 tsp crushed garlic
  • 1 tsp crushed ginger
  • 1 small finely diced tomato
  • 250ml water
  • 125ml thickened cream
  • 2 tsp sugar
  • 1/2 tsp chilli powder
  • 1 tsp salt
  • 1 Tablespoon Celina's Pantry Korma spice mix
Method:
  • Cut paneer into 1 inch cubes and fry in a small amount of oil until golden on all sides. Remove from the pan and set aside.
  • In the same pan fry onions over medium heat until slightly brown, then add garlic and ginger. Cook until fragrant.
  • Add spinach, tomatoes, salt, Celinas Pantry Korma spice mix, chilli powder, sugar and water and simmer gently for 5 minutes.
  • Blend the sauce using a stick mixer then once smooth add the paneer cheese and cream.
  • Continue to simmer (covered) for a further 15-20 minutes then taste for seasoning before serving. This is where I'd normally add more salt and chilli powder to suit our taste.
