Cook time: 20-30 minutes
Serves: 4-5 people
Ingredients:
- 300grams cubed paneer cheese
- 250g frozen spinach
- 1 finely diced onion
- 1 tsp crushed garlic
- 1 tsp crushed ginger
- 1 small finely diced tomato
- 250ml water
- 125ml thickened cream
- 2 tsp sugar
- 1/2 tsp chilli powder
- 1 tsp salt
- 1 Tablespoon Celina's Pantry Korma spice mix
Method:
- Cut paneer into 1 inch cubes and fry in a small amount of oil until golden on all sides. Remove from the pan and set aside.
- In the same pan fry onions over medium heat until slightly brown, then add garlic and ginger. Cook until fragrant.
- Add spinach, tomatoes, salt, Celinas Pantry Korma spice mix, chilli powder, sugar and water and simmer gently for 5 minutes.
- Blend the sauce using a stick mixer then once smooth add the paneer cheese and cream.
- Continue to simmer (covered) for a further 15-20 minutes then taste for seasoning before serving. This is where I'd normally add more salt and chilli powder to suit our taste.
